I sent this picture to my daughter yesterday. She wrote back today saying that her daughter already has her cake started this year for the Cake Review next week. She said maybe next year.

As for cutting into the cake, do you know what happens to all those beautiful cakes at the fair? They are judged and ribboned a week or so before the fair, and then the winners go into the freezer awaiting their showing at the fair. The fair is six days long and after that, ALL the cakes go - - - - - - -!

We have "plastic icing" in Australia (sometimes called fondant icing but marzipan would be too tempting a product to use and not sure it would keep for very long - I prefer royal icing but that would be a greater challenge.
