I found a good recipe for Mapo Tofu, except it was not vegan annnnd I didn't have Chinese, chili, bean paste. So, I tweaked the recipe. I changed the the bean paste out to gochujang (Korean chili paste,) and used my TVP/wheat gluten crumbles to replace the ground pork. I also added a little more oil, because normally, the pork offers up some fat. Lastly, I added a big handful of chopped cilantro and a sprinkle of chili flakes because I like it hot.
