Love your blocks Sharon. Your triangle is looking pretty damn good!
I initially learned PP with New York Beauty which was my first quilt. So, PP is the easiest for me. Then I did a couple of bargellos (not as hard as they look) that were strip pieced, now I'm learning all aspects pf piecing with our Jane quilt. Applique is getting easier with each block, but those Y seams are challenging! Should I learn to do them so they come out right, or just avoid them altogether?

I say learn how to do y seams, otherwise you limit yourself to what patterns that you can do,
