I'm not sure if this has been suggested, but be sure to have her do some journaling. You could get her a plain journal that she could decorate the cover of (decoupage with those pressed flowers?) ... and leave room on some of the pages to insert those pictures of the two of you ...

I love the ideas generated here!

No re camp at a rustic park no electricity but this one does have a flowing well with very good water! It is on a shallow lake so fishing is kind of out I do have Kayaks we we will be doing that on calm water days!

Get a beginner book and teach her to crochet. This is a hobby you can do just about anywhere.

I personally love the journaling. I used to go to FLA to visit my grands when I was a kid.
I wish I wrote the stories they'd tell and the recipes they did. no one has the family recipes
I enjoyed as a kid, and my grandma was a great cook and made up a lot of her own foods.
a pictue with the recipe would be great too. she can start a cookbook of her own.

love all the suggestions, I keep coming back to see what's new.

I have a wooden game box that has checkers, chess, etc. add some sewing, etc... Also how about dying fabric using items from nature. (Berries, flowers, leaves, grasses).
