doesn't want to eat the suff I can right away? I like to see it on the pantry shelf for just a little while before we eat it. I just finished canning 10 pts of hot peppers and DH has already opened two jars. Am I crazy to want to see the fruits of my labor lined up all pretty and colorfull on the shelf?

I'm with you. Seeing things lined up and perfect is a thrill all its own.

And then I eat things. :)

I am with you... eat the fresh first, once the garden is all done and then start on the canned and frozen :D:D:D

I know just what you mean. Just finished making 8 pints of raspberry freezer jam and the first thing my hubby asked was, "did you leave any out to use now?" You know they love our "fruits of our labor."

My grandmother had a pear tree in her yard, and after we moved in with her to care for her, my mother took over canning the pears. We would, of course, eat some in the late summer when they were ripe, but I liked saving them until the weather was cold and nasty, and I would SO enjoy that taste of fresh fruit from the warm weather!!! UMMMMMMM!

I not only don't want to eat them; I don't want to put them away! I have a high shelf in my kitchen for decorations and I always end up putting a jar or two up there because they look pretty.

Tell him that the purpose of canning is to have it available when the weather doesn't allow to grow them. In the mean time, you enjoy how pretty they look.
