You can cook them just like you cook turnip greens... same with mustard greens. Sounds good, and don't forget the cornbread!

A true southerner eats their greens straight,the only thing I add to my greens is a slice or two of smoked bacon and salt,weather it is turnip or collards

I cut out the stems, all the way down the leaf. Then slice oh maybe 6 cloves of garlic, saute that lightly (don't get too brown, then add the greens a handful or so at a time and wilt down, just keep adding another handful after they wilt down. YUMMY

I grew some a couple of years ago after having traveled in the South. I'm not a "greens" lover, but those were fabulous. This recipe came very close to what I had in a restaurant. They are easy to grow, and if you let them go to seed, you'll have enough seed for years!

Yes, Poke greens need to be boiled and the water poured off at least two times. I like to cook mine with bacon grease for a looooong time. Usually add a pkg of frozen turnip greens or spinich to the first picking because it's not a lot at first.

We love collards. I cook some fat back, add the cleaned and cut up greens and about a tablespoon of brown sugar. Cover with boiling water and cook till tender.
We like them with beans or blackeyed peas , sliced tomato and cornbread......yum!! :thumbup: :D :thumbup: |
The perfect recipe! I add a bit of vinegar and nutmeg.
