This is my all time favorite sweet potato recipe. I don't like the sickly sweet marshmallow kind. These are creamy and you can taste and smell the spices. I think this might be like the ones you had.

Sweet potatoes peeled and diced
heavy whipping cream
cinnamon
nutmeg

Put sweet potatoes in a pot and add heavy whipping cream until the sweet potatoes are 3/4 of the way covered. Cook on a medium boil. And stir to make sure cream doesn't scorch. Boil until the sweet potatoes are soft.(like when mashing regular potatoes). Do NOT drain cream. Use an electric mixer to mash the sweet potatoes with the heavy cream that they boiled in. Add spices. I like to add cinnamon and nutmeg always. Some times I also add a bit of allspice? or pumpkin pie spice would work. I believe the original recipe calls for ginger but I don't like ginger so i have never added it.

Wow thanks everyone.
I'm going to try them all. I guess by the time Thanksgiving and Xmas are over I'll be good and sick of them. And probably a few pounds heavier!

Boy, you all have some great recipes. Often, I just 'bake' them in the microwave like a regular baked potato and then put butter on it, like a plain potato. Of course, I live alone, so I don't go to a lot of trouble when fixing food. Also, allergies tend to limit what I 'just throw in.' But I'll have to experiment a little. Thanks for the great ideas.

i'm with you - just cook in microwave, peel, mash like you would white potatoes, add cinnamon, margerine, maybe a little milk, eat

Sweet Potato Casserole
FILLING
3 cups sweet potatoes (2lb. can)
2 eggs
1 Tablespoon vanilla 1/4 cup melted margarine
Beat well with mixer in large bowl until well combined. Pour into a greased 13"x9" baking dish.
TOPPING
1 cup chopped pecans
1/4 cup melted margarine
1 cup brown sugar
1/2 cup flour
Mix in bowl until well combined. Sprinkle on top of sweet potatoes. Bake at 350 for 35 minutes.

1. Baked or BBQ Sweet Potatoes are a great treat! Wash, pierce with a fork, spray with cooking spray (Pam) or lightly oil, wrap in foil and bake.

2. Microwave and serve just as they come out of their jacket.

3. Peel sweet potatoes, boil till fork tender. Mash lightly. Peel an apple or two, chop or slice. Mix in with the potato, add a dash of cinnamon, add a generous drizzle of maple syrup. Cover & bake 350 F for 45 min.

So many ways to enjoy :)

I can't find my recipe right now but maybe you should look up sweet potatoe pie-mmmmmmm!

My sweet potatoe recipe includes sliced apples.
