We're from the deep South and we've always eaten lots of sweet potatoes and my mom's sweet potato pie is yummy. We do as so many others and bake our potatoes. I think they have a richer taste if they're baked with the peeling on and a little oil or shortening rubbed in. We eat them plain with butter and it's like dessert. I agree with the lady who said that most recipes for the s. potato casseroles are too sweet for my taste. Just like simple foods.
For my mom's pie, she just mashes the baked potatoes and adds sugar to taste, some butter or margarine and a little cinnamon or not. Again, I like simple foods and the potatoes are so rich and sweet that they don't need lots of spice and only a little sugar added to make the pie. Yummy. She doesn't put eggs in her pie because that makes it more custardy. Simple, huh! |
I cook Sweet potatoes in microwave also. We eat them about twice a week. I mash them, and if they are going to be "sweet" I use splenda and honey. We use just butter other wise. We also buy frozen sweet potatoe french fries. We also only eat brown rice LOL

when it's just me I bake it in the microwave then a little butter and brown sugar. for meals I dice & cook untill soft,drain, then put a little alspice or pumpkin pie spice (to taste), brown sugar and butter, mix and bake about 30 minutes on 350.

After I cook & drain mine I add marshmallow cream, pecans, brown sugar,& pumpkin pie spice then mash or blend with a mixer. Taste & add whatever is missing. Bake it in a casserole dish at 350 for 30 min. Then add big marshmallows on top & brown. Be careful the big marshmallows might explode. They only need 3 or 4 min's.

Here's my recipe. May be similar to others, but this one we have used for about 10 years. Never anything left. Make Ahead Sweet Potato Casserole 2 large cans of Sweet Potatoes OR 6 large fresh yams or sweet potatoes, cooked, drained, peeled. 1/4 cup sugar 2 eggs 1 teaspoon real vanilla flavoring 1/3 cup milk (I have lactose intolerance and use Goat's milk. Makes it smooth and rich tasting) 1/2 cup butter 1/3 cup firmly packed brown sugar (light or dark) 1/3 cup chopped pecans or more if you like 2 tablespoons all purpose flour 2 tablespoons butter 2 tablespoons As stated before, cook, peel, and mash like regular potatoes. Combine with 1/4 cup sugar, eggs, vanilla, milk, and 1/2 cup butter. Beat on medium speed until smooth. Spoon into greased 12 x 8 x 2 inch glass baking dish. Combine brown sugar, pecans, flour, and 2 tablespoons butter, sprinkle mixture over casserole. Bake at 350* for 30 minutes, uncovered. Tastes better when made the day before, cooked, and refrigerated. Serves 8-12 |

I always hated sweet potatoes because the only way I ever had them served was "candied". I went to someone's house for dinner and they had baked(just plain) and I love them. Sometimes I bake one for dinner and mash cottage cheese in it and call it my dinner.

Nadine, just bake the sweet potatoes (pierce them with a fork first!) either in a regular oven while you are baking meat loaf or something, or bake in a microwave oven. After about 5 or 6 minutes, squeeze with a hit mitt to see if the potato "gives" to the touch. Cook in 30 second increments until done. Then, take out, cool a little, and peel. Mash with any of the following: butter and cinnamon or pumpkin pie spice and brown sugar; or butter, brown sugar, orange juice and orange zest. Happy cooking! I had 9 sweet potato plants this year and harvested 149 pounds of sweet potatoes. They weighed anywhere from 10# (honest), 8, 7, and down to fingerlings. I gave the two largest ones to a local mission so they could feet many people. I am giving some to a needy family and we are enjoying the rest. They are good, believe me.

Sounds like everyone makes them almost the same way. Every so often I bake them instead of regular potatoes.

Funny you should ask this...I just got a new cookbook today and it has this one:
2-3 large sweet potatoes 1 stick margarine or butter 2 eggs 1 cup sugar 1 teaspoon vanilla 1 teaspoon cinnamon Peel and slice the sweet potatoes. Place in large pan, cover with water, bring to a boil, reduce heat and cook until fork tender (about 30-45 minutes). Drain well and place in large mixing bowl. Add the butter and beat with electric mixer until smooth. Add the eggs one at a time while mixer is going. Add sugar, vanilla and cinnamon, mix well then place in casserole dish. Bake 350 for 20 minutes then add: Topping: 1 cup flour 1 cup brown sugar 1 stick butter 1 cup chopped pecans Mix together the brown sugar and flour, then cut in butter. Add the pecans, mix well. Put on top of the sweet potatoes and continue 20 minutes more. Sound like what you are looking for? |
My favorite way to eat sweet potatoes is to just microwave them with the peels on, (poke holes like regular potatoes) them let them cool and peel and eat. I suppose if you just mashed them and added some 'pumpkin pie spice', you would have a good tasting dish. You could add some butter and milk for richness. Baked sweet potatoes are my guilty pleasure. I eat them plain.

We like the sweet potatoe as close to its natural state as possible. We like them just baked like a white potatoe with a little pat of butter, salt & pepper. Or:
1. peel (easier than when they are hot) 2. cut into pieces (1 or 2 inch size) 3. steam till tender (I use a steam basket in the bottom a pan they sell in produce.) 4. mash with a little butter, crushed pineapple and/or dried cranberries. Add cinnamon, nutmeg or pumpkin spice as you would like for taste. very simple and not a lot of added calories. We eat these at least twice a week. |

My brother refused to eat sweet potatoes his entire life, but he liked this one. It's been a family favorite for years. It's a low-fat version I got from Cooking Light many years ago. Thanksgiving wouldn't be right without them. I like it because you can make it up ahead and add the topping when you warm them up at the end.

I usually make mine with sugar half brown and half white to equal a Cup cinnamon nutmg a litte bourban vanilla and. Butter to taste. Mash well boiled potatoes bake and for about 20 min spread with miniature marshmellows until brown about 10 more min at 350

I microwave them also, I find that boiling them makes them too watery...I just eat them like a baked potatoe with some butter or sour cream.
I also roast them in the oven, peel and cube toss them in some olive oil, S&P a little garlic powder, spread them on a sheet pan and bake on high temp 450 until done. |
My husband washes them put a slit in each spray them with Pam wrap in foil put on the grill.. You can put sour cream on them or butter and brown sugar or maple syrup.. wonderful....

You can also us this same recipe and make a Sweet Potato Pie.
Just pour the filling inside of a "Pie Shell" and back. |

I bake my potatoes, let them cool then scoop them out. Or you can do it the cheater way and buy a can of sweet potatoes. I actually use canned sweet potatoes to make sweet potatoe pie and sweet potate bread.
I like plain baked sweet potatoes however this is the Sweet potato recipe that I would bring to family gatherings years agao. Evryone loved them I whip my sweet potatoes with butter, brown sugar, cinncmon and 1 small can of chopped pineapple. Pile into a baking dish. Bake about 1/2 hour then remove from oven top with marshmellows and return to oven until golden brown. |
