Ok, I'm gonna do it. Bought a roast, first in years. DH doesn't want mashed potatoes, what can I serve ( veggie wise) with it. He just wants beef & gravey & homemade bread. I'm having guests so need more than that.

Boil some small red potatoes in the skins. Serve some green beans or whatever you like with that.

We like to add our carrots and small potatoes to the beef as it cooks. MMMMMMM so tasty...

A roast with potatoes, carrots and green beans sure does sound good. I always add a package of brown gravy mixed in water to my roast about an hour or two before it's done and it really tenderizes the meat and adds a lot of flavor.

I use lipton onion soup mix (1 package dry) added to my roast, then carrots and potatoes and just add enough water to come up to 1/2 the height of the roast. I then cook it at 350 for 5 to 6 hours. It totally falls into pieces. My mother-in-law (who was a cook at our local hospital and nursing home) begs me to make this for her all the time.

Roasted veggies along with the roast!
.... potatoes, onions, carrots, parsnips, sweet potatoes, beets. Whatever I happen to have, I just toss them all in!

Best meal ever ... and a great quilting day meal.
Put it all together ... stuff in the oven and forget til time to eat! :)
