Corn cakes sound great , as do all the rest of your menus. I'm 200 miles from home and DH just got a successful
lung operation. My daughter has an anneversay today so she says she is grilling some steak and mashed potatoes and
a veggie. Our anniversary of 54 years is on Thursday. I'm very grateful to the very great doctor he had that brought him
threw this. Amen.

I defrosted 2 Mystery items Will smother cabbage with ham, cornbread, and cold asparagras. Ice cream for dessert.
Good Friday will be a crawfish boil with corn, onions, and potatoes. Easter Sunday is the traditinal baked ham, sweet potato souffle, mint glazed carrots, cucumber and tomato salad with sides of stufffed eggs. Call if you are coming ! Hugs

We are having chicken and rice with dry onion soup and mushroom soup mixed into rice.

Steamed cauliflower with Hollandaise white sauce, steamed potatoes, home made sausage patties, home made oolong /ginger ice tea and fresh cut pineapple for dessert.

I made 15 bean soup with onions, carrots, celery and brown rice. I seasoned it with garlic, chili powder, thyme, salt and pepper. The last time I made this, I ate a bowl, left some for son to eat later and froze enough for two lunches. Woke up to find son had not only eaten the leftover in the frig but also the frozen ones for lunches. Ha! I guess he liked it.

We had oven fried chicken breast on the bone,scalloped potatoes & broccoli.Cooked extra chicken for tomorrow's stir fry.

Last night was homemade pork carnitas tacos with pico de gallo and queso fresco. Tonight was spaghetti with meat sauce (I need to make more), salad, and bread. Tomorrow will be beef pot roast cooked in the crock pot, salad, and corn bread.

I had Create a Meal Lo Mein with chunks of chicken. It has the protein, veggies, and starch. And then for dessert I had a Buddy Bar and a glass of wine. My husband died four weeks ago and I am learning how to cook for one. "Serves two" works for one for two nights. I haven't gotten to the pot roast yet. I also found Pictsweet Tuscan vegetables heated in the microwave and that makes a perfect lunch. Lots of veggies. Love veggies! Love broccoli! Will try for something different next week. One week at a time! Edie

last night was pork chops, brown rice w/quinoa (sp), & sauteed asparagus. Tonight is pizza. Tomorrow we have our grandson so it's chicken breasts and tater tots and broccoli. He thinks we have to have tater tots at our house. Think I'll make some brownies too.

Hm. I have to go to the grocery store today. I'm planning on hot dogs with chili and baked beans but that may change if Pinterest will fix their site so I can get on and look at my recipes! grrrr

I read about food I get hungry! Today's dinner is roasted chicken, wild rice, wilted kale, cornbread, all washed down with sweet tea. Pound cake too.

I found a terrific recipe so we had sun-dried tomato polenta topped with sauted spinach and spicy shrimp. My DH said it was a keeper!

How about Hamburgers, a glass of milk,and some fruit? My DH is Diabetic, so can't have fried potatoes with the hambuters--too much carb. So, that is it here!

I made chili this afternoon, so that's what it'll be. I couldn't survive without my French's Chili-O. It's the best.
