I want what texas granny is having

We had terriyaki chicken breasts, steamed rice and pineapple coleslaw. We had been traveling last week and road food can get old so fast.
|
We had marinated - in fat-free italian dressing- fried chicken, wild rice, and cauliflower. Later in the week I'm making a big pot of chili, we eat all kinds of food year around. Fat boy ice cream sandwiches for dessert.

Meatloaf 2 lbs ground beef (I sometimes use 1/2 beef 1/2 ground turkey) 1/2 c cubed cheddar cheese 1/2 c oatmeal (uncooked) 1/2 c chopped onion 1/4 c chopped bell pepper 1 egg 1/2 tsp pepper 1 tsp salt 1/4 c ketchup about 6 slices of bacon ( depending on how wide the slices are) In a large bowl mix everything together except the ketchup amd bacon. Put mixture into a loaf pan. Spread ketchup over top of loaf. Put bacon sliced overlaping on top of that. Bake at 375 about 45minute -1 hour. I don't know how many this would serve as I like leftovers for sandwiches |
