Try this...seems like a lot of work up front with lots of easy meals in the future. I would recommend not peeling the potatoes, just give them a good scrub with a stiff brush and slice. My kids always liked them with the skin on. If you had one of those french-fry slicers it would be even easier.

Go a little farther on this site & check out the sweet potato pull apart fries. I hated sweet potatoes as a kid, but now have a real taste for them. This sounds so yummy & easy to do. Going to try it real soon. Thanks for the site.

love to roast steak fries in the oven. Less mess when you think about get the deep fryer or the oil to put into the skillet fryer. I cut them up about 1" square, dry with paper towels, toss into a bowl, drizzle "a little" oil and toss with your hands. Then layer them onto a foil lined cookie sheet. Stick in a preheated oven about 30 minutes at 400 degrees. Sweet potato fries same way.

Yes, I was looking for ways to preserve potatoes. Thank you for asking. Our crop did not yield its usual results, so I did not worry about it. We have not dug our sweet potatoes yet, and we do have a french potato slicer. But no room in our two freezers. Have a few potatoes and onions stored in racks in pantry.
