I got creative with the produce I had on hand... made a salsa with pineapple tomatillos, a ripe peach, a bit of zucchini, red grapes, and a dash of guava nectar.

If you've never had pinapple tomatillos, they're little berry-like fruits, about 1/2" across, golden yellow when ripe, with a sweet taste that's a little like pineapple, but quite distinct.

I made country fried steak, gravy, biscuit, broccoli casrole and corn. DH was a happy camper.

Man, I wasn't hungry but I am now!!! My supper was a diet coke and chips...just too tired to cook and I live alone. :(

I made some yummy turkey enchiladas, spanish rice and cottage cheese. Melon for dessert.

Just made some juice from berries I received from a neighbor. Froze some for later. Tastes great.
Put some chicken in crockpot. Will add potatoes and carrots. Need to get some Honey wheat bread made - I do this in my bread machine. You need to stay home to make breat the old fashioned way! 2011 has 6 bus trips in it for me this year. Leave for 4 days on the 4th one - going to Minot N.D. for the Host Fest. oct is Nashville and Memphis and Nov is Branson,
Feb was San Antonio, June was Alaska July was Mackinaw and Door County. Way too many trips this year.

I made creamed chipped beef on baking powder biscuits, buttered green beans, home grown tomatoes and pumpkin pie.

I too live alone and really miss cooking sometimes. After church I took off to the nearest Joanns to buy warm and natural on sale; went to Target to get Diet Cokes on sale, plus storage bin things for my stash and went to local Quiznos for a sandwich......should of come home and had my awesome homemade chicken salad ! I tend to cook for leftovers but that means I eat the SAME things for days....NOT saying that Quiznos was bad by no means, just reminded myself that I should of eaten at home !
