Grilled pineapple and chicken quesadillas, with cilantro, jalapenos, onions, jack cheese and bbq sauce. Yum! 😋

Everyone has such creative ideas! I've been trying not to get in a rut. You've given me some ideas.

I ended up with a barbecue, coleslaw and salad.

Loved last night's dinner: Pan grilled Mahi-Mahi in pineapple-habinero sauce, eggplant parmesan discs, and tatoma squash with sundried tomato pesto sauce. Wow! that sounds difficult, but was so easy. Veggies in oven, and fish in hot iron skillet with butter and spices. We have HEB, which sells an amazing "Prime rib rub" that I use on Every-thing.

Ashley333- I’m curious as to what kind of spices you used on your fish. I’m trying to learn different ways to cook fish without frying.

This all sounds so good. I’m trying to find recipes that are low carb, high protein. Does anyone have any suggestions?

https://kalynskitchen.com and the South Beach Diet cookbooks have been very helpful for me.

  • We love to fish. Blackened seasoning's secret ingredient is paprika. Sprinkle filets generously, then add more spices that you like (garlic powder, Italian seasoning, and cayenne pepper). Grill in butter.
  • I cut some Mahi into large cubes and grilled them in garlic butter sauce like shrimp scampi. Served over pasta.
  • Sometimes I grill in just butter or olive oil and add a sauce, or put in a corn tortilla with shredded cabbage and pico de gallo.
  • Shark is firm, so I made shish-ke-bobs from cubes and grilled on pit.
