I'm making Southwestern Chicken in the crock pot. I have to work for a few hours this afternoon so when I get home all I have to do is make the rice.

Large salad from the cow hall. It had tangerine slices, olives, pickles, tomatoes and lettuce. The pickles substituted for salad dressing.

We had salmon patties last night, his with mashed potatoes, and me with mac and cheese, which he doesn't like. Tomorrow we will have bbq ribs. So...tonight, I am thinking omelets.

There is pulled pork in the fridge, as well as peppers, porta bella mushrooms, feta cheese, tomato, red and yellow onion, hmmm, yep...omelets, lol. I just made myself hungry.

We eat a lot of chicken breasts, so I try to keep them on hand in the freezer. It's about time to buy a leg of lamb, divide it up for shepherd's pie, roast, etc. LOVE shep pie. If you buy ground lamb, it is so expensive, so I try to watch for a half way decent price on leg of lamb, and grind part of it myself with my little mini processor. Love that little thing, too.

My niece made a big pot of pinto beans with ham. So my guilty pleasure tonight will be beans and cornbread with slices of onion! Heaven!
