The cookie recipes I drag out at this time of year are oatmeal/raisin (I add walnuts), peanut butter, snicker doodles, no bake peanut butter/oatmeal, snow balls and if I get those done there are others that my family doesn't call for as much. But the more variety, the better!

I like pizzelles, but my Dad used to make a peanutbutter spice raisin cooking that was absolutely delicious. I'm not supposed to eat anything made with wheat flour, it's not going to kill me like some allergies, but I can get a little nauseous if I indulge .

Cookies made with all butter are too flat. Cookies made with all shortening aren't buttery flavored. I put some of both to get the best texture and flavor cookie. (Thank you Martha Stewart!)

Chocolate Chip Cookies


½ cup Shortening
½ cup Butter
1 cup packed Dark Brown Sugar
½ cup Sugar
½ teaspoon Baking Soda
¼ teaspoon Salt
2 Eggs
1 teaspoon Vanilla
2½ cups All-Purpose Flour
1½ cups semisweet Chocolate Chips
1 cup chopped Pecans

- Preheat oven to 375 degrees

- Beat shortening and butter on medium speed for 30 seconds

- Add brown sugar, sugar, baking soda and salt

- Beat in eggs and vanilla

- Beat in the flour using the bread dough beaters on your electric mixer

- Stir in chocolate chips and nuts

- Drop dough by rounded teaspoons two inches apart on an ungreased cookie sheet

- Bake eight to ten minutes, until edges are browned

- Cool on wire rack
