Don't put your quilt too tight in your hoop, this is important for hand quilting. Eveness is much more important for the stitches than length - you will see with more practice your stitch length will change.

You might have the fabric in your hoop pulled too tight. You
will want to get 4 or 5 stitches on your needle before you pull
it through. You get them on the needle with a kinda 'rocking'
motion. Hope this makes sense to you.
