Waving hello from Maryland! When my daughter was that age I sewed a quilt at her direction and sometimes you do strange things when there's a kid involved!

Hello from another Marylander. If your daughter likes dolls, you might try letting her pick three fabrics she likes that coordinate to make a doll quilt that's about 16x18". Get a dark, a Medium, and a light, because it's contrast that makes quilt blocks stand out . I'd get 4 "fat quarters" ( which are 18x 22 approximately) -- 3 for the front plus 1 for the back. And maybe 1 regular 1/4 yd of a solid for the binding that goes well with front and back.

You could make the front as easy as strips to practice getting your 1/4" seam just right.

I personally like the teaching style of a YouTube gal called crafty Gemini. Especially her binding tutorials.

There's always a debate among quilters as to the necessity of washing new fabric before cutting it. I don't want to turn that topic into a big deal here on your welcome thread, but I always wash and use a product called Color Catchers (by Shout, in the laundry aisle). I don't want any fabrics bleeding on my final product.

Be sure also to press your work as you go. Many new quilters don't understand the importance. I didn't.

Enjoy the hobby. It's addicting!
