Hello and welcome aboard from Germany :). Your grands are precious!
Personally, I wouldn't start with paper piecing, but just joining squares together. You can print pics of your grands onto fabric and take these as center squares. Just my 2Cent :).
Enjoy the process, this is most important.

My GD's are 6 and 9 and have been sewing on paper - they do mazes and dot to dot with no thread. Hopefully they will learn control.
