Sometimes I have trouble staying focused on projects from start to finish so the way I have found that helps me is to have maybe one big project and two or three smaller ones( such as a table topper or place mats) going at the same time. Usually the largest is the primary project (such as a queen size quilt for a grown grandchilds gift due by a certain date). I try to keep all of them going at the same time, and if I get a little tired or frustrated when something is not going as I think it should while working on one, I take a a break and work on one of the others. This seems to work out good for me.
