Lightbulb Quilted Jacket Dilemma Advice Needed

First of all I am new here so thank you for allowing me and my dilemma onboard.
I need help as I foolishly started making a quilted jacket without a pattern. I realize it would have been easier to just make a sweatshirt quilted jacket but I think I am too far in to change.
I have the jacket pinned & basted together but I need to make a decision about the V Neck opening I want. I realize I've gone beyond my skill level.
So far jacket has a lining and I'm not planning to add batting. I'm wondering if I should cut 2 neckband strips 3 1/2" wide apply a lightweight fusible interfacing to it, sew together and position at the neckline and front edges.? or if I should just finish without a band and interfacing ?
Since I don't really want to add any additional to the lower half of the jacket it would only be on the V Neck portion.
Feel free to be completely honest (just not cruel). I realize I'm not really so good at this.

Pretty start! I wonder if the new faux leathers that the edges don’t have to be finished might be a solution. You could either use your band or just edge with binding also.

Welcome to the forum from Texas. This is a great place to get questions answered.
Your jacket is beautiful. If it were me, I would use a band to face the entire neck (front & back) & I would go ahead & face it all the way down the front to the bottom edge on both sides. Looks like you've made great progress in making this without any sort of instructions & I think you will be pleased & proud to wear it when it is finished. Don't forget to show us the finished jacket.

I'm not sure I can be of any help, but was wondering how you are going to get in and out of it.

Will it be a pull-over, or a button up, or zipper front?

I am not a seamstress but I have made a sweatshirt jacket. I made it a v neck. Because I have a large bust, the straight front didn't hang right above the chest. I just put the jacket on backwards, and marked where I wanted the V to fall on the jacket. I made a batik jacket also and used a 2 1/2 inch strip as a "binding to the edge". I folded it back inside and stitched it down by hand. Probably not the way a seamstress would do it but it fits my body and was easy in batiks.

How does it look when you put it on?

If it lays the way you want it to, how about just lining it and calling it good?

First of all let me welcome you to the QB from SE Michigan. Your jacket is soooo beautiful. I love it. I would stay with the simple V-neck with a firm facing. You are doing a great job on it and I am sure you will get a good deal of use out of this jacket. Thank you for sharing this project. I hope to see a lot of you here on the QB.

Per a PM from OP, it will have a button front. Most jackets that I have seen that have a button front and v-neck will have a placket or band from hem around neck and back. Some examples (one actually has band all the way around) as follows:
