I don't hand piece much, but someone on here said that they draw a i/4 inch line on each block. There is a 1/4 inch ruler that you can get for this
If you post this on main, you will probably get lots of help!

I marked the seams on my handpieced blocks, it made it much easier to match the pieces up

Yes I hand pieced my whole giant dahlia. Mark the 1/4 inch on the block and sew only from joint to joint. For example if you are sewing two squares sew from where two lines meet to where two lines meet. Do not sew the seam allowances. It worked well for me.

I agree with kwhite. When I took my first quilting class many years ago this was what I was taught. By not stitching into the seams (any of them) they are able to go any direction when the block is completed and pressed. It is also possible to fan the seams in a spiral fashion when doing 8-pointed stars and such.
Also, I knot my thread and back stitch at the start of a seam, when I come to a seam intersection, I back stitch on both sides for re-enforcement. At the end of the seam I knot and back stitch again. I do leave thread tails since it is the back of the piece.
    Good luck with your endeavors.

Have you tried Inklingo? It's wonderful for hand piecing block shapes.
