True-------------but double threads on a binding help reinforce the bindings.

I do the same... never thought about using single... and love to hand sew binding ... so you are not alone...

I never thought about it either but I always use double. Then I don't have to worry about the threading sliding out of the needle! Hand sewing the binding is one of my favorite things. Weird, yes.

I use single quilting thread. And do a blind stitch. Was told once that a double thread rubs against each other and frays.
Don't know how true that is tho. Matter of choice I guess.
