Do you think I could take lightweight interfacing or something and starch starch starch it and have a homemade product like this?

You could give it a try on some sample projects and see how it works :D:D:D

Should be interesting!

It's pricey enough, isn't it - your starched option would be cheaper.

sounds interesting, let us know if your experiment works.

I (although I have never tried this) have been told that you can iron fabric (and I suppose your interfacing) to Freezer paper and put it one sheet at a time through the printer.

I've done this with great success. I make the original cut of the freezer paper 9 x 12. Then, I iron the fabric on. After the fabric is on, I cut it down to the 8 1/2" x 11".

TIP: I put a few sheets of paper under it before printing to help the printer grab it.

I've done this to make a scrap of fabric when I only needed a 2" square. Scanned and printed. :)
