I cut mine 2 1/2" then I have lots of room to work with.

I use a 2" cut for smaller doll quilts/wall hangings, it is more difficult to get them wrapped around.
For larger quilts I cut them 2 1/4 - 2 1/2". :D:D:D |
i like 3 inch with a i/2 inch seam------smallest i would use is 2 1/2 with 1/4 inch seam
I usually do 2.5 or 2.75 depending on the batting...
I also do mine 2 1/2".
I like mine to start at 2.5 inches. Any smaller and it seems to small to me.
I always cut mine 2 inches. I like the small binding that is full of batting. It results in a very neat and tidy finished edge.
I use 3" for a large heavy quilt and 2 1/2" for others.

I usually do 2", but that means I have to be really exact in my trimming and sewing as well as tight in my folding. If I am feeling at all lazy, I go to 2 1/4 or 2.5" For kid quilts, I now go 2.5 from the back to the front and sew the binding down by machine.
