Sounds like a great idea to me. I've used flannel fabric (not a sheet) but doubt there's any difference.
One thing though- I would make sure the sheet is pre-shrunk. Flannel tends to shrink.

I've used a flannel sheet before, worked great. Just wash and dry the sheet first, shocking how much flannel shrinks.

I make lots of charity quilts and have started to use fleece for backing. No shrink worries and inexpensive.

I have used a flannel sheet once but I did use a light weight batting with it.. No matter the flannel will hold the warmth. It should work well.

My concern would be that flannel gets pills with laundering.

I am working on "Lemon" (Lemoyne) stars from the MSQC / Jennie Doan tutorial. And of course my scrap pile. It's for my niece in Florida so of course I love this idea!

I used to use flannel sheets all the time because you would have no seams on the back. I watched for the winter white sales, now I watch for the flannel sales at JoAnn's. I always prewash any flannel before I use it.

I use the flat flannel sheets from sets where the fitted sheet completely wears out. There's a little nostalgia as the adult kids sleep with quilts made from their own bedding.
