Same thing happened to me. I was trying to make a case for a "body pillow", and it had no case to begin with. So I measured it in several places, took the front panel measurements and added 4 inches for extra room, plus an inch for seam allowances (since I was going to do half inch seams and then finish off the edges so they wouldn't fray. Anyway, point was, I thought I had allowed plenty of room. What I hadn't taken into consideration was that the pillow had been under the blankets all night, and I measured it first thing in the morning. So between the time I measured it, and the time I tested the front panel on it, the pillow had time to expand to its full size! Which made my panel woefully inadequate.
If I were you, I'd measure when the pillow is for sure at full expansion, add more inches than you think are necessary, and then add two side panels to make it fit. You could even add contrasting side panels, and make it look like they were "part of the original plan". It would be neat! (Do we say "neat" anymore?) Ok, then, very sharp! Go with the flow. Use this opportunity to make something even more special. You'll be glad for your mistake!
