Currently I have a Dutchmans Puzzle Quilt in the making. In the center of the block the four flying geese units meet. If I press the seams to one side, there is a HUGE bulk, YIKES!!

What would you do? Press the seams open? I'm thinking about snipping the seam allowance in the center to press it to opposite sides. Good idea?
Any suggestions are highly appreciated :).

I took a class in Lancaster this year on doing Kaleidos which have 8 pieces coming together in the center. They had us have the seams going in opposite directions. I'm not sure what you are doing but also sew the to center on each side.

I press open and also you can use a rubber mallet although i did not try the mallet when i did my kaleidoscope i did press everything open

I carefully make little snips in the center - especially when making pinwheels - it helps them lay flatter.

I make my seams all go in the same direction. When you sew that last seam, joining all the parts, just press down with your finger and twist to loosen the threads a little. I even slip the last threads apart to help them lie flat. On yours, the seam on the right should go up and the seam on the left should go down.

Did I get you, to achieve this, I have to snip the seam allowance in the center, right? Then I can press the right side up und the left side down.

I press my seams open all the time. Even then sometimes you get more bulk than you want. You could 'grade' your seams. You would (carefully) trim one layer of the seam as close to the stitching as you dare. I haven't tried the pounding method but it should help as well.
