I've seen a quilt made with a bali striped fabric that is cut on the diagonal and then reassembled into a chevron pattern. Can anyone help me figure out how this is done and how much fabric I'd need?

I think you might be talking about a French Braid?

no this was made with a single piece of striped fabric, the chevrons were made when the stripes rejoined
