Craftsy has a school spirit section. Here's a link, I think.

might try Pinterest.

It would help to know what the fabric you have looks like. When I wanted the fabric to be the main focus point I used it as a center medallion and then added borders. Also a single Irish chain, using the main fabric as the larger block then complimenting fabrics working as the chains would work too.

Since I a big fan of the Jayhawk, I would make him front and center. :D

I agree on knowing what fabric you have before making a suggestion on the quilt pattern. Small logos? Large mascots etc. Photo would be great.

One of the coolest I've seen was using solid red and blue for sashings/borders, etc and the maker fussy cut large Jayhawks out of her fabric and used a basic square within a square to frame the Jayhawks.

use the fabric and applique large letters to a background.

Take a look at the BQ pattern by Maple Island Quilts. I think this pattern is great for any 'focus' fabric like for a college theme. You can use your KU logo fabrics for the large blocks, then use two solids for the lines and backgrounds in the KU color scheme. (Jayhawks, red and blue??? Can't remember for sure.)
