I have done several quilts with the “Carpenter’s Star” pattern & love it. Quick & easy.
Another one that I have made several times is called “Walkabout” & I downloaded that pattern from Connecting Threads. Both of these patterns are quick & easy & you can make them in different sizes by changing the size of your blocks.

Another easy one .... Trip Around the World quilt
Easy for cutting and assembling.
Very stash friendly.

Easy does not mean it can not be dramatic and showy.
A TATW one can be quite an attention getter!

Bird Coumns a free pattern by Windham makes a great modern quilt big enough for a twin bed and it's fast and easy.

You could try a disappearing 9 patch or a panel quilt.

I made a Yellow Brick Road quilt and loved it. It's made of three different blocks: one with three pieces, one with four pieces, and one with five pieces. Because of the three different blocks and turning them different directions, the quilt appears much more difficult than it is and the result is very pleasing. I put a narrow (half inch) accent strip into each of my blocks, so my blocks had 4, 5 and 6 pieces. I think changing that up really made the quilt even more beautiful.

How about a Chevron pattern. Missouri Star has a great and easy pattern I think on making a Chevron quilt, I've used their pattern several times and found it to be much quicker and an easier pattern than some other Chevron patterns I have tried.

Jordan fabrics just had a YouTube video on a rail fence quilt with pinwheels in it. Very cute and not much more difficult than a regular rail fence quilt.
