How about a rag quilt? they are super easy and forgiving.

I, too, would suggest something easy like sewing a bunch of 5" charms together.
Also, a Double Slice Layer Cake patter is easy peasy. And a Disappearing Nine Patch. Basically a quilt where she doesn't have to match seams or cut any triangles. |
I second the block quilt suggestion. You can't go wrong with a classic 6" block quilt. Works great for mixing fun fabrics.

If she'd like to get signatures at the reunion, she could try this kind of easy quilt. Borders with a large print work really well with this.

I'll add my vote for the Double Slice Layer Cake. Super easy and no seams to match. It's actually easier than a simple block quilt, because those have to have seams matched and have thicker intersections to quilt.

What about s simple album block with a space in the middle where family members can sign their name? Just a thought.

I think the fabric could be the key. If you found one that she loves and is related to her subject in mind, a simple pattern like a warm wishes would be fun and cute. It is very doable for a beginning quilter.
