Trip Around The World can be an interesting one.
For a newbie .... the bonus of all the same size of squares, using larger sizes, will let it work up fast, so that she can have the feeling of completion and success without a lot of tedious work.

Whether only using three fabrics, or an assortment of RBW fabrics, it can become quite an impressive quilt.

Another one that would work well, Carpenter's Square/Star.
Again, done in big blocks it would work up fast. Here, she would get the experience in making HSTs, for something a little more than just doing blocks together.

I so agree with others here that MSQC is the place to look for a fancier pattern that is easy to make. If she picks one with a layer cake at the most if she already has her fabric, she would have to cut 10" squares to get started. I have made several of her quilts and every one of them came out perfect.

Thanks everyone for the great suggestions. I was using Google but there are just too many out there. It is hard to pick out a pattern for someone else, so I thought I would just narrow it down a bit with you all's suggestions, which were awesome. I'm going to send her a list and let her look thru them and decide what she wants to do, then I can help her.

Yellow Brick Road is my go to easy pattern.
