How can you not use a walking foot when putting binding on or doing SID? the walking foot will pull your top fabric and move it at the same time as the bottom. I am now using the walking foot on other thick projects and I no longer have bunching at end. You can also use the wakling foot to sew seams if needed while you are putting on binding.

Thanks so much. Everyone wrote such useful tips and I am saving them all.
Your tute is exactly what the judge at our quilt show last Summer showed me. I just needed more instructions, so I have copied yours for my "book."
