First side stitch all the way through, then second side just stitch into the backing fabric with an invisible stitch ( I use a ladder stitch)

I think I would use a whip stitch or back stitch to sew through all 3 layers to stabilize the edge. Then I'd sew the first edge(s) then flip and do the other side. It means going around 3 times, but it will be much easier, I think.

I hand stitched both sides of the French Binding. I pinned it in place with plenty of quilt pins first, which seemed to work. Just took time!
