Of course, the easy way is to wait for the bigger backing to arrive but, if you are anxious to complete the project, there are some excellent suggestions here already.
As for binding, I would suggest not using flannel for that. It is so soft that I don't think it will stand the test of time. I'd use cotton or even a blend fabric. The poly will give it some strength for the edge of the quilt.
