In the center of my block there is a few seams coming together, how do you avoid the bulk of the seam in the center of the pinwheel?????

Press your seams so that they all go the same way, either clockwise or counter clockwise. then pull open the fw stitches on the longest seam, and press that one open. (You will now have a tiny pinwheel in your seam allowance). Do you understand? I am not sure this was clear.

Whenever I have more than 2 seams coming together I press them all open. It is amazing how much bulk is eliminated this way.
Good luck!

it can help to to stop stitching right on the 1/4" mark, don't cross over each seam as they meet...but the 'spiral' pressing works very well

I use the spiral method. And sometimes a little drop of water in the center before pressing helps too.

I fan (spiral) seams when they intersect. I do this for all seams. Example: my nine patch will have four seams that I fan out. The block will be flat with not bumps at the intersecting seams.

I press my last seam, the one that goes down the center of the block, open. The other seams are all pressed clockwise.
