Searching for suggestions

I am making a monsters inc baby quilt for my new cousin, and came to this dilemma. what fabric do you use for sully? I DO NOT want anything that is FUZZY to avoid the choking hazard. How would you do this?

Minky too, or finding a blue batik and use stitching to give the fur look.
