I would like to know if someone could explain what a topstitch needle is, what it is used for and about the different sizes.

A top-stitch needle should be a sharp needle, not an universal point.
You would select the size according to the weight of your fabric.
If you are going to use 2 strands of thread for your top-stitching, than you should have a sharp with a larger eye. For instance, you could use a needle designed for using metallic threads because it would be sharp and have a larger eye.
