I've always pressed to the dark side unless their are four seams meeting at the same place and then I press the seam open. Rarely do I press them open due to the chance of bearding and the possibility of the seam opening.

I have not made many quilts, but to me it seems like press to the dark side unless you have to deal with bulk, then press open.
