What's the easiest quilt you ever made?
 
The easiest one I ever made was this one https://www.andoverfabrics.com/Quilts/Passport.pdf
They're easy because there are no matching seams. I just lay my pieces across the top of my bed in rows and re-arrange them so that there are not a bunch of same colors together, sew it all, and trim to make the sides even. Great scrap busting quilt. I'm going to make some for the nearby nursing home for Christmas.

The easiest I've done was my Cottage Romance, made from 24 fat qtrs. Took me about about an hour to cut out 6 layers at a time, and 2 or 3 hrs to sew up. All done with chain piecing.
When I get my mojo back will be making more of this style quilt.

The Man Quilt. I've made 6 of these. They look good with girl fabric or novelty prints, too.

This one, for my son:

I cut 6" strips and 2 1/2" strips. Sewed them together, alternating the fabric, then cut that in 6" wide strips and added 2 1/2" sashing. Backed with fleece.

It was my second completed quilt, made for my son last winter. I probably could have lined up the squares better (or just offset them completely), but it was very fast and easy. I quilted with a zig-zag stitch, stitching in the ditch.

plain patches seems the easiest to me, but i have to admit the OPs quilt looks very easy
