My custom made cutting table is 19" high, 40" wide and 79" long. I am short, so I wanted it made so I can stand up straight and lay my hands on the tanle without bending over putting stress on my back. I also wanted it so I don't have to stand on a stool. My room is big enough that I can walk around my table to use all both sides and ends of it.

I would go as big as you have room for.....considering using it to sandwich a quilt or measure 90" wide batting....
Always the bigger the better......be it table, money or diamonds.....

I've had a very sturdy laminated table (with folding legs) in my craft room for two decades. It measures 72" wide x 30" deep x 28.5" high. I find I can't work at that height but I've purchased a set of 6" bed lifts which will raise it to more comfortable height of 34.5 inches. (I'm 5' 8") Just waiting for my son to visit so he can do the lifting while I scoot the bed lifts under the legs. I've cut fabric and sewed at my dining room table for years but it, too, is a few lacking in height to work comfortably.
