I usually don't cut all the pieces at the same time because my wrist won't allow it. I cut as many pieces as I can before my wrist hurts too much and I have to stop. Then I sew for a while before cutting more pieces.

Currently I'm making a red and white sampler quilt so am deciding on -- and cutting-- each block as I go. For scrappy or other kinds of quilts, I cut pieces for a lot of blocks, until I get tired of cutting, perhaps, and then start sewing. But my dining table is usually cluttered with fabric, cutting mat and rotary cutter until I get that entire quilt pieced, and I never cut sashings or borders until blocks are done, often because I haven't decided on them until then.

I do both - depending on the quilt design. I cut some, sew some, then cut more. Sometimes my DH likes me to sit and watch t.v. with him...I can't be idle with my hands, so I cut more while watching t.v. If I know he has other things to do and we will avoid the t.v. time, I cut them all out, then sew them all at one time.

sometimes I do it that way, but usually I do the blocks first and then cut the sashings--because I may change my mind about sashings, as some have mentioned, or it will look differently after the blocks are done. Since I'm working for stash, that works for me. if I had bought everything at the fabric store and kinda HAD to use what I had for each thing, I'd probably go ahead and cut the sashings at the beginning if I were sure I was going to use what fabric and already knew the size, etc.

I also cut everything except the border. This way I can keep on sewing.

It depends on the quilt. I rarely use a pattern, so therefore no fabric requirements list for me to follow and sometimes I cut until I know I have enough fabric before I start sewing. That often requires cutting most or all of the quilt pieces first. I've come up short only one time and had to set aside some cut pieces (added to my stash for scrappy quilts) and go buy some fabric to replace it.

it depends, if I am working with scraps I may cut everything first and then put together according to colors, if I have a pattern to follow I cut some and sew some!
