One of my all-time favorites is Mountains by Lonestar. the chorus is:

"Louie Louie" really defined the '60's. But we never knew the lyrics to the rest of it. We had to wait 'til the Internet was invented so we could find out what our song was all about!
Not sure yet, that we actually KNOW! :-)

Carole King was the first one that came to mind.
Some great folk songs by Peter, Paul and Mary also come to mind.
