You could use the extra strips for binding. I love scrappy bindings for scrap quilts, it looks great. You can see my scrappy binding in this quilt.

I always hold my breath in the hope that I have purchased enough fabric using the pattern requirements in case I mess up the cutting or the measuring somehow. I would much rather have LOTS leftover, then not enough. I just take all of the extra and put it with the rest of my scrap extras.
I love that Candy Dots quilt.

I would take some measurements of the top and try to coordinate some borders. Couldn't hurt if it were bigger and you would be using up the extra fabric. Also maybe a pillow case or two to match the quilt.

The reason there was so much left over is because these folks are in the business of selling fabric. If you want to make something they have published, and they tell you what you will need - you will buy it. Or you can figure out for yourself what you want to make and/or figure out how much you REALLY need. I LOVE graph paper!
That said: there is always a way to use the scraps. I do hope you enjoy the journey.

Try making a colour wash quilt or a bargello,which are similar patterns in concept. You sew all of the strips together lengthwise so that you make a striped sheet of fabric. Then sew the sides together to make a tube. Place this tube of fabric crosswise in front of you and cut strips across the fabric so that you end up with bracelets of fabric that you can unpick in one spot and move up and down to create interesting patterns. When you are happy with your result (usually a stepped design) sew these new strips together and you have a new quilt.

I love your quilt and the fabric, you could make place mats pot holders sewing machine cover, the colors would complament any room. God bless.
