Paper piecing. It looks like it would take a long time to do and I don't have that kind of patience.

I tried one once and it came out fine, but I don't like patterns that are tedious. Hence, I choose simple patterns that I can do easily and quickly.

I made a miniature Cathedral Windows quilt. My son thought a full size quilt would be beautiful. I said, "no way!"

Paper piecing is actually easy and fun. I made a Union Jack quilt for my DIL and paper pieced the blocks. Not highly complicated, as some projects are, though, which could make a difference. Haven't done another paper pieced project but I'm not longer wary of it so probably will, at some point.

I was given a pattern for Hawaiian applique ---it is a beautiful pattern but it scares me a little.

Love the Winding Ways quilt pattern. Even bought the acrylic templates to cut the pieces. Did attempt a couple of blocks. Couldn't seem myself persevering through who knows how many practice squares to get it down.

I also want to make a Bargello quilt. For the longest time I thought no way and had no interest. But I have moved to admiring the quilt to looking at different how to's to wanting to do one. Still find it intimidating though.

Never jelly roll race, bargello or Hawaiian But I like paper piecing and piecing in general.

I thought the same thing until I found Katie Flynn Nichols in 2011. She sent me the fabric measurements that I'd need to make a queen double wedding ring quilt. I sent them off and she laser cut them. After trying several different ways of putting the pieces together, I bought a Curvemaster foot. Spendy, but so worth it. Those are the tricks I learned. It was worth the effort. My mother handquilted over 1/2 of it. It was her last quilt work and is now treasured by my son and DIL.

I cannot do paper piecing. I've tried and tried and have finally given up. That's why I will probably never do a New York Beauty.
Most of the things I probably won't make isn't because I can't but just because I am not fond of the pattern. I won't make a double wedding ring. I also probably won't ever do something with a lot of hand applique because hand sewing is so hard for me. I have done some machine applique tho. Generally speaking, if I really like a pattern I will probably try to make it. My first experience with curves was because my daughter loved the pattern and asked me to make it for her. It wasn't perfect, but she loved it.
