There are really so many, it just depends on how much work you want to do to organize them. Do you want to first cut them into strings and separate them dark/light? Then maybe a string quilt or log cabin? If not, then maybe one like I've done with just strips with a bold color separating them. Do you like the totally haphazard look of a crazy scrappy?
There are scrappy chinese coin patterns...very easy. It really depends on you and how much work you want to do. There have been some really fantastic scrappy quilts done and posted here. Spend some time looking through the scrappy quilt show on here.

This is my favorite scrappy quilt. You can do it with planned coordinating fabrics but I like the scrappy.

I like using up my scrap squares with a 4x4 (16 squares) or 5x5 (25 squares) block, always including 3 black squares in each block.
I get , if I use 2 1/2" squares, an 8" or a 10" finished square. I sash with black 2 1/2 (cut) strips.
It's a very simple and easy to put together top and always looks good.

I made a quilt called "Nickel Bricks" and had it quilted in red thread. I'm considering making it again for one of the wedding gifts for our daughter, Alea. It was such a fun quilt to make, so colorful, easy, and I absolutely love how it turned out. It's the quilt pictured on the bottom.
