I am making a zigzag log cabin it calls for 6 blocks across and 8 down. It takes two blocks to make the zigzag my question is could I add just one block to make it 7blocks across I would have the zig but not the zag.

If it does not look unbalanced to you? then go for it :D:D:D

It's your quilt , you can do what you want. Maybe try drawing it out on paper to see what it will look like.

I don't see why you couldn't. Put one on the end of your row and see if you like it. :-) :-)

Ignore the colors, but here is an example of each layout:

I had the same prob making a scrappy Irish Chain. I did not want square but for it to be balanced it had to be square. I made enough blocks to see what the layout looked like before I sewed them together. It drove me nuts!!! I had to have it balanced. So I really think it is whether or not it is going to bug you when it is finished!!!!!

If it is a bed size quilt you would not be able to see both sides of the quilt at the same time so I don't see where there is a problem with an uneven number of blocks.
