Brenda K, here is the recipe for my Sweet Potato Rings:

2 cups sweet potato's-mashed
3/4 cup brown sugar
4 Tbsp melted butter
1/4 tsp cinnamon
1/4 tsp nutmeg

Mix together. Lay out pineapple rings on a cookie sheet, leave a little space between each. Dab the mixed ingredients in the holes of the pineapple rings. Put a dent in middle and top with a marchino cherry. put minature marshmellows around the cherry in the mixed ingredients. ( ring, mash mix, cherry in middle, surround cherry with marshmellows).
Bake 400 degrees for 10 minutes, or when marshmellows have melted and browned a little.

I have been busy working on our church's Thanksgiving Dinner tomorrow evening. So far I have 97 people signed up. I set it up as a carry in and have 5 people make turkeys, and 18 pies are a must. Then we get all the sides brought in by members. I am going to do the sweet potato rings for my carry in item. I am going to make a Key Lime pie, (really easy to make), and try a pumpkin creme this year. My husband has a guy he works with going to deep fry our turkey we are also taking. Last year we had 118 members and family show up. I think this year will be even bigger. Will let you all know how it goes.
