You can customize it for your storage needs with a combination of drawers and shelves.

I have a counter top cutting table that is 3' wide by 6' long. It is three pieces. 1 is a stack of drawers, 1 is a stack of pullouts, and the other side to the pullouts is shelves for books etc. Did it this way so I could get it in and out of the room if need be. I also have a 3' x 6' cutting mat on the top. I love it!

Hubby built me an 8 ft by 4 ft table (kitchen counter top height) and put a new formica top on it. We sat the top on some inexpensive pre-made cabinets that we got at Lowes on sale. Each cabinet had a drawer and a section underneath with two doors. We bought five and clamped them together, 3 on one side and two on the other. Left the center open on one side so I could sit on my bar stool. Works perfect. Plenty of storage and the cabinets were on wheels so you could move the table around if necessary. I bought a cabinet from Lowe's and put plywood on the top and covered it for an ironing station. I use the underneath for storage and the drawers for what I need at hand when I'm working. Its been one of the best investments. I have lots of top space and storage. I'm considering a few more for a cutting station...etc because the height is perfect.

You are on the right path by making the table high enough. I've thought that an edge for the cutting mat to butt up against would be good, like they have in the LQS. |
I would go with drawers or shelves, leave the pegboard for a wall or back of the door. Those peg hooks hurt if you accidently get against them (How do I know?) My pegboard now hangs at the end of the cutting table on the wall, not underneath, and all my cutting tools are in easy reach. Big rulers are on pegboard behind the door, and rulers I use the most are in small altered old 45 record or cd racks that I can easily reach.
